Mooncake Wellington - Beef (BEST SELLER)
A juicy beef tenderloin is wrapped in a crispy pastry. This meaty mooncake contains all the classic ingredients of a British Beef Wellington, including Parma ham, white mushrooms, foie gras and black truffle sauce.

Mooncake Wellington - Beef | Baking Reference:
Defrost the Mooncake Wellington in the fridge (4°C) overnight (around 12 hours)
Leave the Mooncake Wellington at room temperature for 10 minutes before cooking.
Preheat the oven (Grill+Fan Mode) with the baking tray for 15 minutes to 230°C (190°C for air fryer).
Take out the baking tray, line with baking paper and place the mooncake on top.
Whisk an egg yolk and brush a thin layer of egg yolk over the surface of the mooncake.
Place the baking tray on the middle shelf of the preheated oven at 230°C, bake for 10 minutes for medium rare, 12 minutes for medium, 15 minutes for well-done (Air fryer 190°C, 8 minutes for medium rare, 10 minutes for medium, 12 minutes for well-done).
Remove the mooncake from the oven and rest for 3-5 minutes, serve while it’s still hot and enjoy!

The mooncake should be stored in the freezer (-18C). You will need to defrost the mooncake in the fridge (~4C) overnight / 12 hours ahead, rest at room temperature for 10 minutes before baking.
How can I get a golden brown Mooncake Wellington? 
You must brush egg wash over the surface of the mooncake thoroughly. 
You should use the [Grill+Fan Mode] for the oven to get an evenly golden brown crust. 
What should I pay attention to when using the oven/ air fryer?
You should PREHEAT the oven/ air fryer for at least 15 minutes before baking. The power of each oven / air fryer may vary, therefore you may adjust the baking time accordingly until you can achieve a golden brown crust.
