Thnot (Palm) sugar is a kind of sugar that cannot be produced commercially, because it takes 15 to 20 years for a palm tree to harvest juice to make sugar. In Cambodia, palm trees grow naturally, and no one can wait 20 years to pick sugar. In addition, the palm tree body is smooth and cannot be climbed, so a tall bamboo shelf must be erected to collect it.
The sugar picking process is laborious and dangerous, and it is currently the product of homemade.
The sugar farmers climbed up the trees to collect the nectar with bamboo tubes, and then filtered them to boil. In this process, no chemical additives, spices and sugar are added, so that the palm sugar retains the original and natural flavor!
By giving a new impetus to the exploitation of sugar palm tree (Thnot in Khmer language), threatened by massive illegal logging although it belongs to the natural heritage of Cambodia and is one of its main natural resources, Thnot sugar are improving farmer incomes in Cambodia with high value added products grown in local soils.
