The NV Babot Cava I Vi Brut Nature is a custom cuvee made for importer Eric Solomon and Barcelona wine merchant Quim Vila. White Fruits, brioche, mineral, and floral notes lead to a vinous, surprisingly sophisticated, dry Cava with excellent concentration and length. It is an outstanding value in sparkling wine for drinking over the next 1-2 years.

60% Xarel.lo, 30% Macabeo, 10% Parellada
Traditional method of Champagne. First fermentation in stainless steel tank and second fermentation in bottle. Ageing for 15 months in the caves with regular riddling to enhance lees contact.
